Vegetarian kebabs or Turkish-inspired blue potatoes
Inspired by Surya's pictures of Turkish meals, I was convinced that, aided with the Internet and Kalustyan's, I could make it myself, and make it vegetarian.

Vegetarian kebabs

Three small blue potatoes boiled till soft.
A slice of chopped red onion, sauteed with a small tomato, 1 tsp of Urfa pepper, 1 tsp of Maras pepper, 1/2 tsp of salt, & 1/2 tsp ground black pepper. Cook till tomato is soft.
Add strained potatoes, and saute till slightly browned. Add 1/2 tsp coriander-cumin powder (or to taste). I think oregano and parsley added would've been good too, but I didn't have it.

As for the tsatsiki-like sauce:
A cup of Lebni, a thick middle-eastern yoghurt/kefir. Mixed with one finely chopped garlic clove, salt, ground pepper, 2 tbl of olive oil and chopped mint leaves.

Served with warmed lavash. A tougher, pita-like flatbread. And sprinkled with sumac. (a non-poisonous berry that gives a distinctive delicious, tangy-lemony flavor to Meditteranean dishes for its unique astringent flavor)
