Watercress and duck salad (from Fresh)
125 ml (1/2 cup) sherry
125 orange juice
1 tbl soy sauce
1 tsp sesame oil
1 tsp sugar
1 tsp finely grated fresh ginger
1 chinese roast duck
110g (4 oz) snow peas, trimmed
400 g (1 bunch) watercress
125 ml (1/2 cup) sliced water chestnets
To make the dressing, put the sherry and orange juice into a small saucepan and bring to a boil, then reduce the heat and allow to simmer until the liquid has reduced by half. Pour it into a large bowl and add the soy sauce, sesame oil, sugar and ginger.
Remove the skin from the roast duck and cut it into thin strips, scraping off any fat. Lay the skin strips on a tray and grill them briefly until they crisp up, then put them on a paper towl to drain off any fat.
Remove the meat from the roast duck and tear it into strips before adding it to the bowl of dressing. Blanch the snow peas in boiling water and refresh them under cold running water.
Toss the duck meat with the watercress, water chestnuts, snow peas and crisp skin and serve. Serves four.
Carrots, Brocolli and Cauliflower in garlic butter...
I hate vegetables but I know they are important so.. here's my favourite vege dish... Its really simple, not too much of cleaning up and super for a snack, I love garlic...
Serves 5
Ingredients :
- lots of garlic, ( as much as you want ) I usually use about 2 whole bulbs.
- a whole cauliflower
- a whole brocolli
- baby carrots about 20 of them.
- Butter
- Salt and Pepper ( to taste )
- Garlic Powder ( can do without )
- Onion Powder ( can do without )
Chop garlic up into small pieces and put half of them in a microwavable bowl. Add 5 tablespoons of butter, 2.5 minutes on high on the microwave should have it sizzeling... ( you can hear it ), or you can do it in a saucepan.
Chop the brocolli and cauliflower up into small pieces, together with baby carrots, steam them till they are almost soft. Drain the water.
Add combine the bowl of garlic butter to the vegies and mix them well.
Add salt, garlic powder, onion powder, pepper to taste. For butter lovers, add more butter !

vietnamese spring rolls
you make these as you eat them, so you can eat as many as you are capable of making. allow the next wrapper to moisten while you eat one.
-spring roll wrappers
-cilantro, corriander in british
-mint leaves
-this leaf that no one knows the name of nor does anyone remember how it tastes
-lettuce
-rice vermicelli
-meat (boiled and sliced pork, shrimp, baked fish, fried tofu, whatever)
-sauce (hoisin sauce mixed with rooster chili sauce or ground peanuts)
boil the vermicelli, put in a collander. slice the meat. wash the leaves and lettuce. put everything on a table and the dry wrappers. fill a skillet or pie dish with hot water. put it with everything else.
everyone puts a plate in front of them. get a wrapper, dip it in the water so the whole thing gets wet. don't leave it in the water too long. put it on the plate. take a sip of your drink or a puff of your cigarette. reflect. this gives time for the wrapper to become pliable. put some boiled noodles on the edge of the wrapper. put some meat. on top of that put cilantro, mint, and whatever that other leaf is. put lettuce. take the edge of the wrapper and carefully wrap the filling one time over. fold the sides over. as you may know, a circle increases in breadth as you traverse a diameter. this is why you have sides to fold over. finish rolling the whole thing up. roll it tightly but do not break the wrapper. the effluvium of gluten perspired by the wrapper makes it seal itself. you do not need to lick it. put the finished roll on the plate with the sauce you have already mixed. dip another wrapper and set it on your plate. dip the other roll in sauce and eat it.
Aunty Mary's Jollof Rice Recipe
Take 2 cups of rice (Nigerian rice preferably) and soak it in water for about 5 - 7 mins.
Take about 2 onions and chop them up.
Take 3 to 4 tomatoes:
Method: Put 3 to 4 tablespoons of oil in a pot (quantity can be adjusted to the level of oil required)
In this oil, fry onions for just a little while. Do not brown it. Put tomatoes in this after cutting it in big pieces. If canned tomato paste is available, u can add about 1 or 2 teaspoons of this along with the tomatoes. Add salt to taste and one magi cube in it (available at any grocery store)
You may also add very little of red chili powder in the tomato mixture and stir everything. Now, add the soaked rice and add enough water to cook, and cover while cooking.
If you are using meat, steam the meat first and then add it along with the rice.

If you toast the bacon long enough, you can make really salty chips. Oops, I burned them.

For the good life
I always struggle to come up with good snacks to eat in the evening. For instance, last night I settled for two pieces of buttered bread. When I go to the store, I can never find anything delicious and not gluttonous. Any recipes for deliciousness? Let's keep this on a college budget, so put $5 as a price ceiling.
