potatoes
here is something i wonder and i don't have a proper reference book around:

let's say my anonymous friend is making a mash to put atop a shepherd's pie. what if, instead of running the potatoes through a ricer then adding parmesan, salt and egg yolks, she just took the baked potatoes and threw them in a food processor with the other ingredients. what consequences does this invite?

Generally, I would think 'your friend' would get runny potatoes. Or unevenly pureed potatoes. Think about taking your boiled potatoes and chop chop chopping them by hand for an absurdly long time. How good would those mashers be? However, you don't need a ricer for this either. You can use a wooden spoon, if you like the hard way, or an electric mixer. Both hand and stand-up would work.
 
Joy of Cooking, which my friend has just consulted, says "...food processor is too hard on the potatoes, leaving them with an unappetizing gluey texture."
 
makes sense, especially depending on the type of potatoes you use.
