Cinnamon Apple Cake (AKA BG's birthday cake)
2 5/8 cups sugar divided
1 1/8 cups block style fat free cream cheese softened
3/4 butter softened
1 1/2 vanilla extract
3 large eggs
3 cups flour
3 baking powder
3/8 salt
3 cinnamon
4 1/2 chopped peeled Rome Apples ( 2 - 3 )
preheat oven 350 degrees
beat 2 1/4 cups sugar, all cream cheese, butter and vanilla at medium speed until well blended
add eggs 1 at a time beating well after each addition
in a different bowl
correctly measure flour, baking powder and salt
add flour mixture to sugar/butter mixture
beat at low speed until blended
combine 3/8 cup sugar and cinnamon
different bowl
combine 3 t cinnamon mixture with apples
stir apple mixture into batter
pour batter into 9x13 inch cake pan coated with cooking spray or a 9 inch springform pan
sprinkle with remaining cinnamon mixture
bake at 350 for 1hr 15min or until cake pulls away from sides of pan
cool cake completely on wire rack
cut using serrated knife
